This is a very fast and easy dish that is full of flavor and is great for those folks that prefer a more paleo type diet. It's a simple one pot dish with the following ingredients. This is like a Ratatouille with meat! 1 each chopped red, green and yellow bell pepper 1 chopped red onion 2 chopped yellow or green zucchini 4 garlic cloves minced 1 large (16 oz) can stewed tomatoes 1 can (8 oz) tomato sauce 6 smoked or spicy sausage links 1 1/2 pound shrimp 1 TBS salt 1 TBS Pepper 1 TBS cajun spice blend 1 tsp oregano The process: Saute your veggies in a large saute pan with some oil and the garlic. Get them to al dente then add in the sausage. Cook for about four minutes then add in your tomatoes and spices. Saute all that for about 10 minutes. Add shrimp and cook to a easy boil then reduce and simmer for about 5 minutes. Plate it up and if you want some extra snap pour the stew over jasmine rice and serve with a nice pinot noir. I added a little shredded asiago cheese at the end. I picked one of my all time favorites from one of my favorite places, Sonoma County, CA. The Coppola Director's Choice!
